Arbi Ka Achar-Arbi Pickle




  1. 1/2 kg arbi
  2. 2 teaspoons ground methi seeds
  3. 4 1/2 teaspoons ground spices
  4. 4 teaspoons ground aniseed
  5. 3 teaspoons Red chili pepper (Lal Mirchi)
  6. 4 teaspoons Salt (Namak)
  7. 1 1/2 cups Vinegar (Sirka)
  8. juice of 2 Lemons (Nimbu)
  9. 1 1/2 cups Mustard Oil (Sarson Ka Tel)

10. 1/4 teaspoon nutmeg

11. 1 small piece mace

Procedure to make arbi pickle-

  1. First of all you have to boil the arbi in salted water until nearly tender and put for drain and cool. Now you have to peel and press a little them.
    1. Fry the arbi in hot oil until brown. Remove from the fire, add vinegar, ground spices, aniseed, Red chili pepper , methi, salt, lemon juice.
    2. Now, grated nutmeg, mace and cook till it leaves its oil.
    3. After that cool and put in an airtight jar.
    4. This will ready to Serve after two days.
